Soup Results Are In...

On Thursday, I shared a post about wanting to make a Wild Rice Mushroom Soup in the crock pot (despite having a profound ickness towards the main ingredient...mushrooms). At the end of the post...the soup was set to simmer for 7 hours. I still had to add the plant based butter/flour mixture to help thicken it, and the coconut milk to make it creamy.

At the 7 hour mark, I mixed the butter and the flour together. It was not as creamy as the website's photos of that step...I realized after I mixed it I maybe should have melted the butter...not sure...but it was too late. Oh well.

The next steps of the recipe were to add some of the broth from the soup to the butter/flour mixture. There, I ran into a problem. I bought a wild rice blend (which I failed to realize the recipe said NOT to do) because it would make it mushy. Turns out...mushy = soaking up all liquid leaving nothing to actually make it soup. (Please see my soup after 7 hours vs the picture of what the soup should have looked like from the recipe website).

Due to the lack of liquid present, I had to add some more veggie broth so I could add it to the flour mixture. Once that was done, I was able to add the mixture and the coconut milk to the soup to make it creamy.


(On a side note, I was very thankful for the lack of liquid because my first attempt at a close up picture ended with my phone dropping into the "soup" and sticking up like Excalibur from the stone. No liquid = crisis averted.)

Success! It looked good...it (surprisingly) smelled good...it was time to see if it tasted good. Or, in my case, to see if it tasted not like mushrooms.

It might have needed a little salt...but it was pretty good! Next challenge was my kids. I made some chicken nuggets and, because how you present food to your kids is, I find, more important than what is in the food you present, I told my daughter that she was getting nuggets and creamy rice with carrots and hoped for the best. About 15 minutes later, she comes walking up to me saying, "I do not like that rice...it's disgusting." She then proceeds to hand me her bowl...which was full at one point, and I believe speaks for itself regarding how "disgusting" that rice was.

Next up were my boys. I asked how it was and told them to give me a thumbs up or down...it was good!

Even the baby...who has an oral aversion and will only eat via syringe, didn't mind trying it (though her face looks less convincing, you'll just have to trust me that she enjoyed it lol).

This may not be a weekly staple at our house, but, with the colder months finally creeping in (even in SoCal it can get cold eventually) I'm glad I found another recipe where I can get my kids some vegetables without having to smother it in cheese. And seeing a whole crock pot dwindle down to one little container of leftovers is especially satisfying especially since sometimes, new recipes often fall short of our taste bud expectations (which is why we stick to what we know will work for our families).
