Let me just start out by saying, I HATE mushrooms.
I wish I didn't, because they're healthy, but I do. And it's not so much a flavor issue, but a texture issue that just makes me go...ewwww.
However, while scrolling through some crock-pot recipes online this past weekend, I came across this recipe for 'Slow Cooker Wild Rice Mushroom Soup' that looked AMAZING. So, despite my previously stated strong dislike for the little bulbs of fungus...I'm trying this recipe for dinner.
Why? Because I'm hoping that even though the main ingredient IS mushrooms (I mean...it's in the dang name of the soup) that it won't taste ONLY like the mushrooms. Does that make sense?
Also, since it is officially November, which in Southern Cali means "potential for Fall-ish days, but don't count on it," I am hoping crock-pot soups and stews will give me the Fall feels since it doesn't actually feel like Fall.
This East Coast girl misses her seasons. Just sayin.
The recipe can be found at the link below but, as usual food blogs go, there are many words to go with the recipe (and I'll admit, much better pictures than mine).
I'm a planner, so all weekly meals are pre-planned the weekend before I go grocery shopping and highlighted on our calendar so my family can know what we're having (although the only one whoever really pays attention is my 14 year old, go figure).
All ingredients: onion, carrots, celery, *cough*dreaded*cough* mushrooms, wild rice blend (which I realized later that the recipe says NOT to get because the blend part will get mushy, so it recommends JUST the wild rice...whoops), garlic, veggie broth, and Thyme and Oregano seasonings were all chopped, diced, placed and poured into the crock pot (strategically of course for the obligatory blog picture), before being mixed together and turned on low for 7 hours. The remaining three ingredients, coconut milk, flour, and veggie butter, will be added at the 7 hour mark to thicken it up and make it creamy.
While I was trying to put this soup on, my 18 month old decided she could not be without me...literally crawling up my leg, crying hysterically on the floor, sobbing uncontrollably because she wasn't in my arms.
Now, normally I would teach my kids to wait because I don't want her to learn that all she has to do is cry for me in order to get what she wants. However, with her laryngomalacia, when she gets to a certain point of hysterics, she chokes on her mucus and throws up. So...wanting to avoid that mess, I gave in.
Once the soup was on, and the kitchen cleaned (reasonably), it was time for a much needed morning nap and for mama to get to writing since it's been a hot minute. I'll update tomorrow on whether the soup was a hit or a miss.
